I think you can use that turtorial but change it a a bit I guess like cut out a round piece of plastic and slice around his head , just a guess though

That's brilliant!
You could just adapt that technique to whatever kind of hat you wanted. It's pretty impossible to make a removable hat that looks good because toys don't have flexible hair.
